How to Make a Banana Crunch Cake

Things You'll Need:

  • flour
  • light brown sugar
  • unsalted butter
  • pecans
  • ground cinnamon
  • salt
  • baking soda
  • sugar
  • 4 bananas
  • vegetable oil
  • eggs
  • buttermilk
  • vanilla
  • confectioners sugar


Step 1: Heat the oven to 350 degrees. Then coat a 13x9x2 inch baking pan with cooking spray.
 
Step 2: Crunch Topping: In a bowl, combine 1 cup of all purpose flour and 1/2 cup of packed light brown sugar. With a pastry blender cut in 3/4 stick of unsalted butter until the mixture resembles fine crumbs. Stir in 1/2 cup of chopped pecans and set aside.
 
Step 3: Cake Mixture: In a large bowl mix in 3 cups of all purpose flour, 1 1/2 teaspoon of cinnamon, 1 1/2 teaspoon of salt and 1 teaspoon of baking soda. In another large bowl beat together on medium, 1 1/2 cup of granulated sugar, 4 mashed bananas, 1 cup of vegetable oil, 3 eggs, 1/4 cup of buttermilk, and 2 teaspoons of vanilla for 1 to 2 minutes until the mixture is well blended. On low speed gradually add the flour mixture until the mixture is blended together. Stir in 1 cup of chopped pecans. Pour the mixture into the prepared pan. Crumble the crunch topping evenly over the top.
 
Step 4: Bake at 350 degrees for 50 to 55 minutes. Let the cake cool in the pan on a rack. To serve sprinkle the cake with confectioners sugar.
