How To Make Chicken Marengo

You will need
 
  • 1 1⁄8 kg chicken
  • 1 tsp salt
  • 1 ds pepper
  • 4 tbsp olive oil
  • 1 ea onion
  • 0.5 ea garlic clove
  • 120 g tomatoes
  • 50 g sherry
  • 2 tbsp flour

Step 1: Prepare the chicken

Use a sharp knife to cut the chicken into pieces.Season the meat with salt and pepper.Sprinkle in some flour to coat the chicken.

Step 2: Fry the chicken

Heat the oil in a pan over medium heat.Brown the chicken pieces in all sides.Set the chicken pieces aside on paper towels to drain the excess oil.

Step 3: Saute the onions and garlic

In the same pan, saute the onions and garlic.Once the vegetables are translucent in color, toss in the chicken and the remaining ingredients (white wine can be a substitute for sherry).Reduce the heat to low and gently simmer for about 30-40 minutes until the chicken is fork-tender.

Step 4: Serve the dish

Serve the dish immediately as it is best served hot.
