How to Make Coconut Cordial

Things You'll Need:

  • 2 liter soda bottle
  • Canned coconut milk
  • 2 to 4 cups sugar
  • 1/2 packet of dry active yeast
  • Coffee filter
  • Funnel
Step 1:  Pour 56 ounces of coconut milk into a large bowl. Add water, up to an amount equal to the coconut milk, depending on how you strong you want your cordial.

Step 2: Add enough sugar to equal to at least half the amount of coconut milk so that a cloudy liquid is created. Mix well.

Step 3: Place the yeast in a small bowl and mix in a few tablespoons of coconut milk. Add the yeast mixture to the large bowl and stir well.

Step 4: Use the funnel to pour the mixture into the clean, dry soda bottle. Leave about 1 inch of space. Pull the balloon over the opening of the bottle.

Step 5: Set the bottle in a cool, dark place and leave undisturbed for up to 7 days. Monitor the small surface bubbles created by the yeast. Note when the bubbles stop forming.

Step 6: Set the coffee filter in a strainer over a large bowl. Slowly pour the cordial into the filter. Funnel and store the finished cordial in a glass bottle with a tight lid.

Step 7: Serve in cordial glasses or pour into glasses with a splash of sparkling water. Refrigerate the unused portion.
