How to Make Peanut Butter Ganache

Ingredients

The following are the ingredients needed in making a unique version of peanut butter ganache;
• 5 cups solid dark chocolate, finely chopped
• 1/4 cup smooth, commercial peanut butter
• 1/2 cup heavy, all purpose cream
• 1/2 teaspoon vanilla extract
• Unsalted butter and sugar for frying

Additional Notes:

The amount of chocolate determines the texture of the ganache mixture and it has a huge impact over the taste and flavor of a peanut butter ganache. You can increase or decrease the amount of chocolate as long as you make it reasonably proportionate to the amount of the peanut butter.

Similarly, chocolate chip morsels can be used as an alternative to solid chocolate.

It is advisable not to use whole, raw peanuts as it will roughen the texture of the ganache. Peanut butter ganache is used as a filling and frosting thus, the mixture should be smooth.

Procedure

Preheat saucepan to low heat. After two minutes, add butter and sugar. One by one, add 5 cups of dark chocolate, ¼ cup smooth, commercial peanut butter and the ½ cup heavy, all purpose cream. Bring to a boil and add the ½ teaspoon vanilla extract.
Once the ganache mixture becomes visibly smooth, pour it in a container and refrigerate to cool. After an hour, stir it continuously to achieve the desired, fine texture.

Once achieved, the peanut butter ganache is ready as a truffle filling or cake frosting. It can also be used to add flavor in small desserts.
