How to Make Green Tea Mooncake

Things You'll Need:

  • green tea powder
  • dough
  • shortening
  • ice water
  • mixer
  • food coloring
  • rice flour
  • melon seeds
Step 1: With the ice water, pour it into the Red Man snow mix and green tea mixture to form a the green tea paste.
 
Step 2: Make sure to add the water in small parts for consistency. Too much or too little water can ruin the paste - and the cake.
 
Step 3: In a plastic or wooden bowl, add small amount of flower to the mixture, and knead in the shortening, until the dough is smooth.
 
Step 4: Add the food coloring in small parts, until it is evenly distributed the dough.
 
Step 5: Put the dough mixture in a refrigerator and let it cool for 30-40 minutes.
 
Step 6: Remove the excess dough and divide it into equal portions.
 
Step 7: Place the dough mixture and spread it on a plastic sheet and sprinkle the melon seeds on top of it.
 
Step 8: Roll and mix the melon seeds, until they blend in well with the paste.
 
Step 9: Press a portion of the dough into a round shape and a small portion (1-3 tbsp) on the center of the dough and roll it into a ball.
 
Step 10: After coating the dough ball in the rice flour, place it into a plastic container. Press the ball until it's flat. Take out the dough from the fridge, and tap the bowl lightly, to loosen the dough.
 
Step 11: Finally, place the dough into an air tight bowl, put it back in the fridge and let it chill, until ready to serve.
