How To Make Orange Cake

You will need

  • 3 large eggs
  • 310 g sugar
  • 250 ml milk
  • 120 ml olive oil
  • 1 minced orange zest
  • 440 g sifted flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 orange
  • 380 ml orange juice
  • 380 g sugar

  1. Step 1: Preheat the oven

Set the oven to 400 F.
    Step 2: Prepare the pan
Get an 8 inch pan and grease it with butter. Sprinkle sugar and flour and set aside.
  2. Step 3: Prepare the egg mixture

In a bowl, beat the eggs and mix in sugar until it is pale yellow in color. Mix in milk, oil, and orange zest.
  3. Step 4: Prepare the flour mixture

In a separate bowl, put through a sieve the flour with baking powder, baking soda, and salt.
  4. Step 5: Prepare the batter

Slowly mix in egg mixture to combine with flour mixture. Mix it well.
  5. Step 6: Prepare the syrup

Slice the orange to split the rind from the zest. Slice the orange skin into thin pieces. In a huge pot, mix in orange juice, sugar, and thin orange strips. Let it simmer until it is thick or for 30 minutes. Filter the syrup and keep the orange strips with half a cup of syrup. Put the left over syrup in a pan and let it simmer until it decreases to few dollops.
  6. Step 7: Bake and glaze

Place the batter on the cake pan and cook it in the oven for an hour. Take the pan from the oven and set aside to cool on the rack. Turn the pan upside down and entirely cool. Poke the holes in the top of the cake and decant the warm strained syrup all over the cake so that it will be absorbed. Put the cake on a serving plate. Glaze the top of the cake using orange syrup and assemble the reserved orange strips on top of the cake. This will yield up to 1 cake or four to six servings.
